These cookies can be made with the peanut butter cookie recipe below or your favorite basic cookie recipe. When I make them with my students I just grab a mix from the grocer that just calls for a little oil, one egg and water. You will need 2 mini muffin pans.
The following recipe makes at least 60 cookies.
Ingredients:
1/2 cup butter or margarine
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 cup sifted flour
3/4 tsp. soda
1/4 tsp. salt

Thoroughly cream butter, peanut butter, sugars, eggs and vanilla. Sift together dry ingredients, blend into creamed mixture shape into small balls (don’t worry if the dough seems a little wet), put balls of dough into mini muffin pan, bake 8 minutes at 375F.
*Note: for variety you can bake some of the cookie dough into regular peanut butter cookies–just roll the dough balls in granulated sugar bake on baking sheet as your recipe indicates.
